Griddle Quesadillas and Our Own Homemade Ranch Recipe





We started our day off by running errands - we found an incredible bunk-bed at a fantastic price the day before but wanted to add some reinforcement - hence the trip to Lowe's! We noticed they have starter plants/vegetables already out. Spring is on it's way!


I don't know about you but anytime we purchase anything from FB Marketplace I have buyer's regret - every - single - time. Why? What if it's a boogie-man! That's why. It's a thing. My husband laughs and laughs but I'm telling you - it's a thing. Just like woods pirates! That's a long story - but I'm telling you they are REAL.


Well we made it to their street and we pulled up to a beautiful home with a polite gentleman (I'm thinking yeah but that's how every thriller starts! Everything looks NORMAL!)


Anywho, all went great! I could breathe a sigh of relief and enjoy the incredible scenery on the way home. We are still finding new areas here and had not been on that side of town yet, which was really a big farming area. It is so beautiful.


We got our honey-do's knocked out and decided to cook up some quesadillas on the griddle. If you haven't seen the un-boxing video of the griddle we chose, go check that out!

With these particular quesadillas we make a ranch and a chipotle ranch to serve with. I am a ranch-o-holic. I am not exaggerating one bit either. I remember when I was pregnant with one of my kiddos I would go to a particular restaurant so much because their ranch was a craving. One day when I was leaving the owner came out with a huge container of ranch and said, "Here you go, enjoy this at home too. we love ya!" On one thought I was pregnant, emotional and teared up because everything made me tear up. That was SO sweet! On another thought I was like is it that obvious?! LOL Yep, ranch-o-holic. Super obvious. Now? Our whole family loves it as much as I do. Why? It's homemade now!


There are SO many ranch recipes out there and you are more than welcome to go try those - I'm sure we did too. We literally tried so many recipes for years but eh....we just couldn't seem to find the right taste. We have been working on our recipe for years. This was a must-share! If you try it let us know what you think!!


I'll start with our homemade ranch recipe:

WHAT YOU NEED:

1 C Mayo - We use Duke's. Is there any other mayo in our opinion? Nope.

1 C Greek Gods Plain Greek Yogurt - yes, I'm serious - and brand matters here too. It's the only one that isn't sour. If you get any other brand you'll regret it. We tried them all. IF that's all you can find? Go for it - and you can add a tsp of sugar to cut the sourness. Easy fix.

1 TBSP Garlic powder

1 TBSP Dried dill

1 TBSP Freeze Dried Parsley - nope, not the dried parsley - specifically freeze dried. The flavor is noticeably fresher!

2 tsp of Onion Powder

1 tsp of Parika OR 1/2 tsp of cayenne (Either/or so whichever you prefer)

A small splash of milk - just enough to make it as thin as you prefer or by all means leave it a thick ranch.


Let this set overnight and you're ready to go! The freeze dried parsley will rehydrate overnight and it will taste so much better the next day.


IF you want to make chipotle ranch? Just add 1 1/2 TBSP of chipotle powder and 1 tsp of cumin - then let it set overnight. In our home we will commonly do half regular ranch and separate half to make chipotle ranch.
