Winter Storm(s) - Yes Plural - and Warm Comfort Food Recipe!




January? It has been one for the books for sure! We are currently in #3 Winter Storm now! Winter Storm Ember, then Gerri and Heather. We had a huge outbreak of storms (some tornado warnings) across our entire state while at the same time we were under a winter weather advisory for incoming Heather. So - winter weather and severe weather and just a few hours before it was 59 degrees and sunny! Less than 16 hours all of this took place. Heather rolled in yesterday and what makes Winter Storm Heather different is the insanely cold Arctic Air that accompanied her! We were at -2 this morning and it won't get above freezing until Wednesday. I think we will get a bit of a break for a day or two then another blast of Arctic Air and possibly freezing rain towards the end of the week. Whatever snow we ended up with will stick and stay put though due to how cold it is. I mean - Alaska had a temp of 25 today. We were at -2 at the same time. Perspective. It's dang cold guys. Dangerously cold. Roads will be a cold mess for days - so we are hunkered down and have comfort foods on the menu!


Our crew loves my pot roast. It is something the kids have grown up on and I introduced this to my husband in 2013 right after we got married. I remember him telling me if I ever made it, "I'm sure it will be amazing and I don't want to hurt your feelings but I really don't like vegetables so I'll probably just eat the meat and sides if that's ok." Whatever floats your boat I told him but you haven't had this yet. Back then, the kids were going to public school (that was just a couple of years and we've homeschooled since!) and my routine when they went to school was clean house daily and I mean spotless. I wanted it perfect when they all walked in the door at the end of the day from school and work for him. The kids walked in one day I made this and immediately put their stuff on the living room chair and went straight to the kitchen saying thank you sooooo much for making this! They couldn't wait! My non-veggie loving husband walked in and asked, "Whatcha cookin' mama? That smells amazing!" He walked over to where I was, gave me a kiss on the cheek hello and peeked in the crock pot saying, "Yep I may just have to try your vegetables if they smell that good!" He's eaten this since and loved it, including the vegetables! Over the years we went from serving with a sliced bread to making our own from scratch. We also went from packaged brown gravy to preferring that made from scratch too! However, in a pinch - we'll use the other if we are in a time crunch!


Cooking for us has been a hobby for sure. We don't just cook to eat. We cook to experiment and create our own recipes and showcase that incredible meals can be made even if you're on a budget. Most people are watching what they spend these days. Most don't have the luxury of eating out or spending like they used to. We hope that what we do helps you in your own cooking journey too. I have had many many versions of pot roast from my mom making it growing up to my grandmother's and at church on Wednesdays. It seems like they are all made different and unique. Everyone makes it their own and you can most certainly do that with this recipe too!

Anytime I've made this for others it was a hit too! The secret? Most definitely the seasonings. If you try this we'd love to hear how it turns out for you!

WHAT YOU'LL NEED: (Remember - we feed a small army here so you can decrease each item as needed!)

3.5 lb roast

3-4 lbs of potatoes (peeled or unpeeled, washed and cut into whatever size chunks you prefer)

1 small bag of baby carrots or 3-4 large carrots cut into whatever size you prefer

3-4 stalks of celery chopped

2 red onions. 1 cut into chunks to layer in roast and one to use as an onion bed

1 bag of McCormick Bag'N Season - I personally don't use the bag - just the seasoning because it's incredible.

1 TBSP garlic powder

1/2 TBSP dried thyme

1 tsp of onion powder

2 tsp salt

2 tsp pepper


WHAT YOU'LL DO:


1 Slice one of your red onions and use the larger pieces to make a bed of onion.

2 Place roast in the crock pot then place other slices of red onion in between where the roast and pot are touching.

3 I take the Bag'N Season and pour in a measuring cup or small cup. I'll sprinkle the top of the roast with some of the seasoning then season it with 1/2 of the garlic powder, dried thyme, onion powder, salt and pepper. We don't use the bags enclosed because we make so much and need the whole crock pot for our family but those work incredible if you prefer to use them.

4 I start layering potatoes, then carrots, then celery and onion pieces until most of the roast is covered but you can still see the center of it. I'll mix the water (1/4 C) with the rest of the seasoning and pour half of that on the roast.

5 I'll continue layering until the entire roast is covered and the lid will still fit! LOL then pour the rest of the Bag'N Season mixture all over the veggies then the rest of the seasonings (garlic powder, dried thyme, onion powder, salt and pepper) over that.

6 Cover with the lid and cook on high. For our roast we cooked it for 5 hours. Cooking time truly depends on weight of your roast but you'll temp it for doneness to make sure it's cooked and until it's shredable to your liking - along with the veggies being done. You can even slow cook it for longer on a lower temp.


We usually serve this with a homemade bread and brown gravy! It is a stick to your ribs meal for sure. We hope you enjoy this too!! Stay tuned for an original meal - another comfort food for winter storm week - our chicken and dumplins' from scratch!
